Fully loaded fluffy Easter Pancakes - Biscoff, Mini Eggs, Maltesers Bunnies and choc drops
Hi hello yes, Easter is this weekend (this year is going so quick but I don't think a pancake recipe is the place to have an existential crisis, so I will say no more on that) BUT lots of chocolate and wholesomeness incoming, yay! :)
I used my fail-safe, vegan American pancake recipe I use for all my American pancakes on here. However, the toppings on these aren't vegan - once again, Doisy & Dam 'Good Eggs' are the best vegan Mini Eggs alternative (I have used some of their chocolate drops on these pancakes because I cannot get enough of them...), and NOMO do delicious vegan cookie dough alternatives for Malteser Bunnies.

Ingredients:
125g self raising flour
2tbsp caster sugar
1tsp baking powder
Pinch of salt
150ml plant milk
1tsp vanilla essence
Toppings: 3tbsp Biscoff spread, chocolate drops, chocolate buttons, Mini Eggs, whipped cream, Malteser bunny
Method:
Mix your flour, caster sugar, salt and baking powder together in a bowl.
Add your plant milk and vanilla and whiiiisk away baby.
Add 1tbsp of oil or vegan butter to a frying pan over a medium heat.
Spoon your pancake batter into your frying pan and cook for 2 minutes each side. I always cover my frying pan with tin foil whilst the pancakes are cooking to make a lil steam oven so they get extra fluffy.
Melt your Biscoff spread in the microwave for about a minute and stir.
Stack your pancakes up, pour your melted Biscoff over the top, then throw all your Easter chocolate on them.
