VEGAN 5 Ingredient Millionaire's Shortbread

"How many ingredients? 5!?" …yep, only 5 ingredients! (well, 6 including the pinch of salt). These are so, so easy and they are just stunning. The 'caramel' sauce loophole I have used is genius (...again, in my humble opinion).


Ingredients:

  • 250g plain flour

  • 75g icing sugar

  • 175g vegan butter

  • Pinch of salt

  • 2 jars Biscoff spread

  • 2 bars dark chocolate (or vegan milk chocolate)


Method:


  1. Line a brownie tin with greaseproof paper and set aside.

  2. Literally throw your flour, salt and sugar into a large bowl and stir it.

  3. Cut your butter into chunks and rub it into the dry ingredients until it sort of looks like sand texture.

  4. Pop it out onto a clean surface and form it into a dough.

  5. Press your dough into the tin until it covers the bottom evenly, stab it a few times with a fork and then pop it into the fridge for 10 mins.

  6. Whilst that is in the fridge, preheat the oven to 160 degrees and pop your shortbread into bake for about 15-20 mins or until it looks golden brown.

  7. Leave the shortbread to cool for about 20 mins.

  8. Once it’s cool, put your Biscoff spread into a microwaveable jug and blitz in the microwave on high for about 1 minute or until it is liquid smooth - pour it over your cooled shortbread and pop it in the freezer for half an hour.

  9. Melt your chocolate in a bowl over boiling water (don’t let the water touch the bowl or it will burn the choc, just let the steam do it’s thing).

  10. Once it’s melted, pour it over your Biscoff. Use any Biscoff you have left in the jug to blob on the top and marble with a toothpick

  11. Pop it back into the freezer for half an hour.

  12. When you want to eat these, just take the slab out the freezer, leave it for around 15 minutes and then cut it with a really sharp knife. Enjoy!
