VEGAN: Christmas Pudding no-bake Rocky Road cake
I won't lie, I'm really proud of this one. Apart from being festive and fun, it's the first time I used my dome tin and I am so happy with the outcome. I made this for a Christmas do but she would be so cute for Christmas Day/Boxing Day dessert, too. I used digestives, vegan marshmallows and Biscoff in this (I wish I had a crowd that liked cranberries but alas, cater to your audience and all that...)
Ingredients:
125g vegan butter
400g vegan chocolate (I used 200g dark, 200g milk)
125g golden syrup
150g Digestives
150g vegan marshmallows
100g Lotus Biscoff
100g vegan white chocolate
Method:
Pop the butter and golden syrup in saucepan over a low heat.
Whilst they melt together, finely chop your chocolate.
Once the butter and syrup has melted, tip your chocolate in and stir together. It should melt easily, but if not then just pop back over the heat for a few mins and keep stirring.
Smash up your biscuits and thrown them in with the marshmallows and any other add-in's you're using. Stir together until all covered.
Line a small pudding basin with clingfilm and pour the rocky road mix into it.
Level out and freeze for 1-2 hours or until set.
Take your rocky road and carefully remove it from the mould. You may need to leave it for a bit to come to room temp, but don't leave it too long or it'll start to melt.
Melt down your white chocolate and pour over the top.
Set for 20 minutes in the fridge. Add whatever you want to use for holly on top (I really had to improvise with mine loool).
