VEGAN: Christmas Pudding & Santa Hat Brownies
Adorable. These are perfect treats to bake with the kids (or without lol). They're very easy to make and a lot of fun to decorate. You could make reindeers with mini pretzels as antlers, cover them in red and green sprinkles, polar bears with white choc buttons for ears, make them grown up and add glacier cherries.... have fun with it. Merry Christmas!
Ingredients:
150g plain flour
200g caster sugar
30g cocoa powder
Pinch of salt
70ml vegetable oil
1tbsp vanilla essence
240ml almond OR soy milk
200g dark chocolate
200g vegan white chocolate chips (optional)
200g vegan milk OR dark chocolate chips (optional)
For Santa Hats: 125g vegan butter, 200g icing sugar, strawberries
For Christmas Puddings: 50g vegan white chocolate, 8 Oreos
Method:
Preheat your oven to 180 degrees.
Grease and line a brownie tin with greaseproof paper (top tip: if you haven't got greaseproof paper, rub some oil/vegan butter around the tin then add 1tsp of flour and tap it round the tray until it is has covered the edges and the bottom - tap the excess flour away).
Pop a large heatproof bowl over a saucepan of boiling water (don't let the water touch the bowl).
Break up your dark chocolate and let it melt in the bowl - stir it frequently so it doesn't burn.
Meanwhile, add your flour, sugar, cocoa powder and salt to a large bowl and whisk together until combined.
Once your chocolate is melted, add it to the dry ingredients along with the milk, vegetable oil and vanilla.
Whisk it together until it is combined and smooth.
Add your chocolate chips / chunks and stir them through.
Pour the batter into your lined brownie tin.
Bake in the oven for about 25-30 minutes.
Take your brownies out the oven and leave it on the side to cool for about 15 minutes, then pop it in the fridge for about 10 minutes.
Using a small circle cutter - cut out as many circles as you can get from your brownies.
Whisk together the sifted icing sugar and vegan butter. Place into a piping bad and pipe around the edge of the brownies. Pop the strawberry in the middle for the Santa hat ones.
For the Christmas pudding ones, dunk half of your Oreo into melted white chocolate, add a little holly garnish if using and add to the top of the brownie.
