VEGAN Fake-Steak tacos with chimichurri

Sorry, but how good are tacos? I am definitely team 'soft-shell', but if you are team hard-shell then absolutely swap the soft wraps for crunchy shells!

Fake-steak tacos:

  • However many soft/hard shell tacos you like

  • 1/2 red pepper

  • 1/2 green pepper

  • 1 small red onion

  • 1 vegan steak (I love the Plant Pioneers 'steaks' from Sainsbury's)

  • 1tsp paprika

  • 1tsp garlic salt

  • Splash of boiling water

  • 2tsp olive oil

  • 1 handful fresh parsley

  • 1 handful fresh coriander

  • 1/2 clove garlic

  • 1 green chilli

  • 3 spring onions

  • 1tbsp olive oil

  • 2tbsp red wine vinegar

  • 1tsp maple syrup

  • Pinch of salt

Optional additional toppings:

  • Shredded vegan cheese

  • 1 jar salsa

  • Hot sauce

  • Limes

  • Fresh chopped coriander

Fake steak tacos:

  1. Slice your peppers into thin strips. Roughly chop your onion into quarters.

  2. Pop a frying pan over a medium heat and add 1tsp olive oil. When the oil is hot, add the peppers and onions to the frying pan along with 1tsp paprika and 1tsp garlic salt. Let them fry for about 2 minutes, then add a few splashes of boiling water.

  3. Meanwhile, in another frying pan, add 1tsp olive oil and pop it over a medium-high heat. When the oil is hot, add your vegan fake-steak and cook according to packet instructions.

  4. Whilst the peppers, onions and fake-steak cook, make the chimichurri (see below).

  5. When everything is ready, slice your fake-steak and begin assembling your tacos with any additional toppings you like. Enjoy!

  • Throw all your chimichurri ingredients into a blender and blitz until they are combined.
