VEGAN Fully loaded crispy BBQ 'beef' nachos with cheeez sauce

These are great as part of a big Mexican spread for a dinner party, for date night, a light lunch, movie night… so many options. Have them as they are or top them with crispy BBQ chilli ‘mince’. Don't skimp on the cheez sauce!


Ingredients (serves 1-2):

  • 1 share bag chilli / plain tortilla chips (chilli heatwave Doritos are vegan!)

  • Vegan sour cream / vegan garlic mayo

  • Salsa

  • Handful of fresh coriander

  • Jalapenos

  • ½ tin black eyed beans / pinto beans / black beans

  • ½ lime

‘Cheez’ sauce:

  • Handful of grated vegan cheese

  • 1tbsp plain flour

  • 80ml almond milk

  • 1tsp vegan butter

  • ¼ tsp garlic powder

  • ¼ tsp mustard

  • Optional: cornflour

Crispy BBQ chilli ‘mince’:

  • 1/2 packet vegan mince

  • 1/2 white onion

  • 1/2 red pepper

  • 1tsp olive oil

  • Optional: ½ red chilli

  • ½ sachet BBQ seasoning


Method:


Crispy BBQ chilli ‘mince’:


  1. Finley chop your onion, pepper and chilli if using.

  2. Add 1tsp of olive oil to a frying pan over a medium heat.

  3. When hot, add the onion, pepper, mince, seasoning and chilli and let sauté for about 8-10 minutes. Add a few splashes of boiling water if it starts to stick to the pan.

  4. At the last minute, whack the heat up to high and let your mince get crispy for about 1-2 minutes – keep an eye on it so it does not burn!

  5. Now move onto your cheez sauce (see below!) - you can keep the mince warm in the pan on a low heat whilst you make the sauce (it won't take long)


Cheese’ sauce:


  1. Pop your vegan butter in a saucepan over a low/medium heat. Let it gently melt.

  2. Once melted, add your flour and whisk so a ‘paste’ is formed.

  3. Add your milk veeeery slowly and whisk continuously so there are no lumps.

  4. Once all the milk has been added, take it off the heat and add your cheese, garlic powder and mustard. Stir it through until it looks like it is starting to melt.

  5. Pop it back on the heat and whisk it vigorously. If it is too loose, add 1tsp of cornflour to 1tsp of water and add to the sauce. If it is too thick, add a little bit more milk / water and whisk.

  6. Chop your coriander, drain and rinse your beans and slice your limes.

  7. Add your tortilla chips to bowl / platter. Pour over your tortilla chips and add any toppings you like. Enjoy!
