VEGAN Halloween bake: 1 - 'Bloody Mummies' raspberry jam pastry puffs
The first of our Halloween bakes this October. These little pastry Mummies are made up of 3 ingredients (all premade too, so I guess this is more 'assembling' than 'baking', but anyway...), and take about 20 minutes to make. I think they're so cute. These are inspired by a recipe I saw on BBC. They're simple but so tasty. If you wanted to make them PB&J flavoured, scrape over a little bit of peanut butter before you blob on your jam. And if you wanted to make Pizza Mummies, use tomato sauce and a lil bit of vegan cheese. Scarily simple... (I'm so fucking sorry, I apologise in advance for the Halloween puns coming your way)
I am currently making these with cheez and marmite instead of the jam and, update: they're really good.
Ingredients:
1 packet puff pastry (GF if needed)
1/2 jar raspberry or strawberry jam (or cherry or fig or blueberry or apricot)
plant milk (only a little bit needed for brushing the pastry at the end)
Optional: edible eyes (I got these babies from Tesco)
Method:
Pre heat your oven to 170 degrees and line your baking tray with greaseproof paper.
Roll out your pastry gently. Cut it into 6 squares, then cut each square in half so you have 12 squares in total.
With the other sheet of pastry, cut it into strips. You'll be using these as the ribbons to cover your Mummy.
Spoon your jam into the middle of your square pastry. Avoid the edges. I would say use 1tbsp jam per square so you don't overfill it.
Decoratively place the pastry strips over the jam, gently pressing the edges down.
Brush with the plant milk and bake for about 20 minutes (or until they're golden)
Add the edible eyes if using, and enjoy either hot or cold!
