VEGAN Rice Krispie and marshmallow, white chocolate heart cups with Party Rings

How CUTE are they!? I love them. I think these are my favourite things I have made thus far. They look like a vintage roller disco. This is my second attempt at making these vegan Rice Krispy bars. First time round they weren't the best I can't lie. Luckily, I had Lou to give me feedback and she said "more white chocolate, more syrup, less Rice Krispies" - so that is what I did. And I made them heart shaped because.... cute. The addition of Party Rings and vegan smarties injected some much needed colour. So cute.


Ingredients:

  • 55g vegan butter

  • 200g vegan marshmallows

  • 1tsp vanilla essence

  • 140g puffed rice cereal (double check they're vegan - I went with Free From ones to be safe)

  • 3tbsp golden syrup

  • 3 bars vegan white chocolate (I use Tesco's Free From Kitchen)

  • 2 packets mini Party Rings

  • Optional: vegan smarties (I used Doisy&Dam)


Method:

  1. Before you start, grease whatever tin you are using for these - I used a silicone heart mould and then a small, square baking tray for mine.

  2. Melt your vegan butter over a medium heat in a large saucepan.

  3. Once your butter is melted, add your vegan marshmallows and keep beating them around the saucepan until they are gooey and mostly melted.

  4. Take off the heat. Add the vanilla and golden syrup and mix together.

  5. Gently tip your FF Rice Krispies into the saucepan and mix until they are covered in marshmallowy goodness.

  6. Using a spoon (or your hands, just got careful as it will be hot), press your Rice Krispies into your mould and pop them in the fridge for about 10 minutes to harden up.

  7. Whilst they’re hardening up in the fridge, melt down your vegan white chocolate.

  8. Take them out the fridge, pour over your vegan white chocolate, add your smarties and Party Rings and carefully pop them into the freezer for about 10-15 minutes.

  9. Enjoy!
