VEGAN S'mores pancakes

Bonfire night is one of my favourite nights of the year (I think being outside all bundled up with your mates looking at pretty things in the sky is so wholesome). These are fluffy, sweet and cute as hell. I personally don't like Winter at all - the dark nights and constant cold is not my vibe, but these pancakes make those Winter mornings a bit of fun. Go careful with toasting your marshmallows too, the sugar on the outside can catch very easily.


If anyone has any tips for not burning the absolute SHIT out of marshmallows when toasting them lmk lol.


Ingredients:

  • 125g self raising flour

  • 2tbsp caster sugar

  • 1tsp baking powder

  • Pinch of salt

  • 150ml plant milk

  • 1tsp vanilla essence

  • Digestive biscuits

  • Vegan marshmallows

  • Vegan chocolate

  • Syrup


Method:

  1. Mix your flour, caster sugar, salt and baking powder together in a bowl.

  2. Add your plant milk and vanilla and whiiiisk away baby.

  3. Add 1tbsp of oil to a frying pan over a medium heat.

  4. Spoon your pancake batter into your frying pan and cook for 1 minute each side.

  5. Toast your marshmallows and make up however many S'mores you can handle.

  6. Stack your pancakes up, add your toasted marshmallows and s’mores and drown them in syrup.

  7. Enjoy!
