VEGAN Swedish IKEA style meatballs and mash

I spent SO much time in IKEA in May it was honestly painful. However, it did give me inspiration to recreate their infamous meatballs, but of course make them vegan. They are delicious, something a bit different and, thanks to the microwave mash, super quick. We won't talk about how much time I spent crying into flatpack furniture...


Ingredients:

  • 1 packet vegan meatballs (I used Richmond)

  • 60ml vegan cream

  • 200ml vegetable stock

  • 2tbsp lemon juice

  • 1tbsp plain flour

  • 4tbsp cranberry sauce

  • 1tbsp fresh dill

  • Salt and pepper

  • Vegan microwave mash


Method:

  1. Pop your meatballs in the oven and cook them according to packet instructions (top tip: if you are using fresh ‘meatballs’ like the Richmond ones - aka: not frozen - you can always split them in half a roll them into smaller balls so they’re more ...IKEA-esque)

  2. Pop a frying pan over a medium heat. Add your lemon juice, flour and a little splash of vegetable stock and whisk away the lumps.

  3. When it’s smooth, add the rest of the vegetable stock slowly and keep whisking.

  4. Finely chop your dill.

  5. Add the cream, chopped dill, salt and pepper and cranberry sauce and whisk together.

  6. Bring to the boil and then pop back down to medium and whisk.

  7. If the sauce is too thick then add some more vegetable stock / too thin then add 1tsp of cornflower mixed with 1tsp water.

  8. When your 'meatballs' are cooked add into the sauce and coat them generously.

  9. Pop your microwave mash in and cook according to packet instructions (top tip: if you don't fancy mash then rice, pasta, chips... anything would go with these!)

  10. Add an extra teaspoon of cranberry sauce on top and sprinkle a little bit more dill. Enjoy!
