VEGAN Sweet and sticky plum and hoisin noodles
I feel like I say this about almost all my recipes, but this one is so quick and really simple. Perfect for if you get home late and need something that can be on the table in 20 minutes!
Ingredients:
Wholemeal medium noodles / rice noodles
Sachet of hoisin sauce
1tbsp olive oil
2 cloves garlic
1 green chilli
2 spring onions
5-6 chestnut mushrooms
Handful of fresh coriander
Handful mangetout / green beans / sugar snap peas
1/4 bag frozen vegan mince
Splash red wine
2tbsp balsamic vinegar
Method:
Chop your chilli, garlic, spring onion and coriander (save some chilli / spring onion / coriander back for sprinkling on top, if you like).
Pop a frying pan over a medium heat, add 1tbsp of olive oil, add the chilli, garlic, spring onion and coriander and fry for about 5 minutes.
Slice your mushrooms and add them to the frying pan. Turn the heat up to high, add a pinch of salt and add a glug of red wine and let the alcohol burn off for about 1-2 minutes.
Then add 2tbsp balsamic vinegar and your frozen vegan mince, pop it back down to a medium heat and fry for about 10 minutes.
Meanwhile, pop your noodles on to boil.
Whilst they boil, add your mange-tout (or whatever greens you like) and your hoisin sauce to the mince and use some of the noodle water to loosen it up. Leave it cooking for 5-6 mins.
Add your noodles and mix it all together. Top with spring onions and chilli. Enjoy!
