VEGAN Tiramisu style American pancakes

Amy's favourite dessert is tiramisu and although it would have been absolutely fine to have tiramisu for breakfast on her birthday, I decided to merge tiramisu and pancakes together for a cute and very indulgent al fresco birthday brunch. I am happy I managed to get the photos that I did because it was 31 degrees and that cream lasted circa 12 seconds before melting and sliding off the top. (This recipe makes about 6 pancakes)


Ingredients:

  • 125g self-raising flour

  • 2tbsp caster sugar

  • 1tsp baking powder

  • 2tbsp cocoa powder

  • Pinch of salt

  • 160ml soy / almond milk

  • 3 shots of espresso OR 2 tbsp instant coffee

  • 1tsp vanilla essence

  • 1tbsp sunflower/coconut oil/vegan butter for frying

Toppings:

  • 1/2 pot vegan cream (we used Elmlea Plant for the shot of pouring cream and the whipped cream on top)

  • Small bar of dark chocolate for shaving on top

  • Cocoa powder for dusting

  • Optional: shot of rum/marsala wine on the side for that real tiramisu experience lol


Method:

  1. In a large bowl, mix the flour, caster sugar, baking powder, cocoa powder and salt together.

  2. Add the plant milk, coffee/espresso and vanilla essence and whisk until combined (a few lumps is okay, especially if you are using instant coffee, the granules will end up floating on top and that's fine! Over whisk and the pancakes risk not rising enough)

  3. Put a non stick frying pan over a medium heat and add 1tbsp of oil/butter.

  4. Once it’s hot, pour or spoon in a small amount of batter, use a spoon to spread it so it’s flat all over and leave it for about 30 seconds - 1 minute (or until bubbling) and then flip it over.

  5. Top tip: I get a sheet of tin foil and cover the top of my frying pan whilst my pancakes or cooking - it creates a mini steam oven and makes the pancakes double in height and become extra fluffy and gorgeous

  6. Cook the pancakes one or two at a time (depending on pan size). Keep them warm in the oven whilst you wait for the rest to cook.

  7. Whip your cream until it's stiff and fluffy and pour the rest of the cream into little shot glasses (or wait and just pour it straight over!) - if you fancy a shot of rum and/or marsala wine on the side then pour that out too (you could shot it straight or pour it over your pancakes before you add the cream!)

  8. Stack your pancakes up, add the cream on top, dust over the cocoa powder and shave over your chocolate. Add the shots of cream/alcohol on the side and there we go... enjoy!
