White chocolate fudge packed with leftover Easter chocolate
Bold of me to assume you have any Easter chocolate leftover, I know. I say a lot of my recipes are easy, but this one is so easy I honestly reckon you could do it in your sleep. 3 ingredients, 4 steps... bliss. I had a shit-load of Mini Eggs leftover so I have crammed them in here, along with M&M's, D&D's and topped with a Crunchie bar that I beat the living shit out of :) The fudge itself can easily be made vegan by using vegan condensed milk and vegan white chocolate, so just chuck in all your vegan leftover treats to ensure these are 100% vegan.
Ingredients:
Condensed milk (397g - I used Lidl own brand, v good and CHEAP)
450g white chocolate OR dark chocolate (depends if you want white choc or dark choc flavoured fudge)
Any leftover Easter chocolates
Method:
Pour your vegan condensed milk into a saucepan. Finely chop your white or dark chocolate and add to the condensed milk. Heat over a medium-low heat and stir occasionally until it has melted nicely and looks shiny.
Allow it to cool for 10 minutes. Whilst it cools, beat the living shit out of your Easter chocolates (or chop them nice and neat, up to you). Add your leftover Easter chocolate into your fudge and stir. Add a lil pinch of salt if you fancy, and stir again.
Place your fudge into a baking tin lined with greaseproof paper. Spread it evenly so it reaches the corners and is level and smooth on top. Pop into the fridge for at least an hour.
Run a sharp knife under boiling water and slice your fudge into bite sized pieces. Enjoy!
